1. Spiced Pumpkin Soup

A spiced pumpkin soup is a perfect cure for wet, rainy days in Northern Ireland. Team your soup with a loaf of crusty bread and it is set to be a winner with all the family. The BBC Good Food recipe is a great one to try out and will no doubt use up most of what remains of your pumpkin.

A classic American recipe, Pumpkin Pie is a nice alternative dessert that is bound to get “mmms” and “ahhhhs” from dessert-loving family members. 4. Pumpkin Seeds

There is no reason not to use any leftover pumpkin seeds inside your pumpkin.
Pumpkin seeds make a healthy and alternative snack and can often fill a spot. Before eating, however, make sure to rinse the seeds of any excess pumpkin, pat them dry, place them in a bowl with a splash of olive oil and salt, then pop them in the oven on a baking tray for 15 minutes.

5. Pumpkin Coconut Curry

Blogger Lazy Cat Kitchen has concocted a pumpkin curry recipe that is too good not to try at some point. Her lovely blend of spices and ingredients in this recipe will have you salivating at the thought. Try out the recipe at the weekend and save any money usually spent on curry takeaways.
