Summer is probably an easier time of year to eat healthy. For one, there are a lot more fresh foods available and, when the sun is out, healthy foods such as smoothies and salads do seem a lot more appealing.

1) Quinoa, Roasted Vegetables and Goat’s Cheese Salad

Quinoa is a lighter and more wholesome alternative to pasta and can either be boiled or bought ready-made. Once cooked, add some roasted vegetables such as sweet potato, peppers and aubergine and crumbly goat’s cheese to your quinoa for an easy and delicious salad. Before roasting your vegetables season and drizzle them with olive oil to add a bit of flavour to your dish.

2) Seared Tuna with Chinese Style dressing

Northern Irish blogger Swankfood has dreamed up this perfect barbecue summer recipe that will steer you away from the not-so-healthy burgers and hotdogs. Nothing says summer better than a tasty taco. For a healthy taco, fill it with grilled or steamed fish and add some flavour with black beans or roasted vegetables. Go one step further and add homemade avocado or salsa for a very satisfying and healthy dish.
