Spring Salmon with Minty Veg

This recipe only takes 20 minutes to prep and cook, and it’s delicious! First, boil potatoes in a large pan for 4 mins. Add peas and beans or any other vegetables you fancy, bring back up to a boil, then carry on cooking for another 3 mins until the potatoes and beans are tender. For a minty dressing, finely chop mint and whisk into oil and lemon. Follow the rest of the steps here to achieve the perfect salmon serving.

Pasta Primavera

Spring calls for fresh fruit and vegetables and there’s no better way to enjoy them than in a pasta dish. Start by steaming some asparagus, peas and broad beans then boil tagliatelle pasta. Meanwhile, fry leeks gently in oil and butter until soft. Add fromage frais to the leeks and very gently warm through, stirring constantly to ensure it doesn’t split. Add some herbs and the vegetables with a splash of pasta water to loosen. Drain the pasta and stir into the sauce. Adjust the seasoning, then serve scattered with cheese and drizzled with a little extra olive oil

Easily Tailored Tacos

If you’re after something quick and easy then try this Mexican speciality. You can pretty much fill your tacos with whatever you like from lettuce to cucumber which makes it easy to please the whole family. Start by frying off your fillings in a pan if you choose to include meat, peppers, onions or garlic, then warm a couple of tortillas, whip up some hot salsa and you’ve got yourself a delicious springtime meal.
