15-Minute Recipes to Help You Survive January
January has officially landed and for many of us the last thing we want to be doing on a cold and dark evening is spending hours cooking. This is the month to keep life as simple and as smart as possible, which is why we have enlisted the help of Northern Ireland’s top food bloggers to share their best 15-minute recipes for an easy January.
1. Down the Hatch NI’s Choppy Chilli Chorizo Pasta
Foodies Robert and Lynn from Down the Hatch NI have been scouring the best of Northern Ireland’s cafes, restaurants and food experiences for several years now, so you can be assured they know what good food tastes like. Below is their take on a yummy chilli chorizo pasta, a perfect comfort food for the dreary nights.
Ingredients: (Serves 4)
400g linguine
1 tbsp olive oil
200g spicy chorizo, skinned and cubed
400g cherry tomatoes (halved)
1 red chili (finely sliced)
1/2 tsp garlic paste
1/2 tsp caster sugar
Basil leaves (to taste)
Parmesan/cheddar
Salt & pepper
Method:
1. Bring a pan of water to the boil. Add a good pinch of salt and the linguine to the pan and cook for approximately 10 minutes.
2. Meanwhile, heat olive oil in a frying pan on a medium heat and add the chili and garlic paste. Stir as it begins to sizzle.
3. Add the cubes of chorizo to the pan, turn up heat to medium-high and keep stirring.
4. After two minutes, add the tomatoes and the sugar, reduce heat to medium and let it bubble for a few minutes, stirring occasionally, whilst seasoning with salt and pepper
6. Drain the pasta and tear basil leaves over the chorizo and tomato mix.
7. Serve with a generous grating of parmesan or cheddar

Paul from Swankfood really masters the art of quick and easy food with his list of recipes. His incredible 8 Hour Chilli Con Carne will have your mouth watering before you have even started cooking. Yes, the name does suggest this dish takes eight hours, but Paul insists that the actual prepping and cooking will only take you 15 minutes. Result!
3. Eating Ideas’ Dijon Chicken with a Mushroom Sauce
Lynne from Eating Ideas has concocted a delicious Dijon Chicken and Mushroom Sauce recipe that can be enjoyed with a side of your choice. This flavoursome dish couldn’t be easier, with all the ingredients being thrown in one after the other. Try it out this winter and have all the family praising you for your culinary skills!
4. Pikalily’s Banana Donuts
Not forgetting something sweet, Nial and Helen from Pikalily have a quick and easy Banana Donuts recipe that will no doubt keep you in good spirits this month. The cold and windy nights necessitate something sweet and, with donuts become increasingly popular, we couldn’t think of a better recipe to try out - especially when it takes no time at all. The ingredients are minimal, with just self-raising flour, baking powder, soda water, bananas, vanilla extract, dark chocolate and caster sugar on the list.
5. Belfast Blogger’s Crispy Honey Chilli Chicken
Conor from Belfast Food Blog has a special Crispy Honey Chilli Chicken that is sure to brighten up your January. For two people, all that is needed are two chicken breasts, soy sauce, egg, flour, oil and a selection of herbs to dream up this dish in no time. If you’re wanting to make Conor’s dish for more than two then simply double or triple the ingredients and follow his very simple method.
